Using Sunny Seafood’s premium frozen tilapia fillets, the fish fries up beautifully crisp on the outside while staying tender inside, ready to soak up all the smoky, savoury XO goodness.

Ingredients
1 Sunny Seafood Cleaned Black Tilapia Cá Rô Phi
3 tbsp XO
200ml chicken stock
100g butter
Oil
Spring onion
Coriander
Instructions
Fill oil in a pan, around 1inch high and heat till hot
Salt the skin of the tilapia. Carefully place the tilapia skin side down and fry for 4 mins or until the skin is crispy and golden
Carefully flip the fish and cook for a further 30 seconds and remove from pan and let rest
Heat the oil and add the XO and cook through for 1 minutes
Add the chicken stock and cook till they fully open. Add the slurry and mix until thickens.
Turn off the heat and add the butter and toss.
Pour the sauce onto a plate and add the fish skin side up and garnish
