Ingredients


Crispy Rice Paper Prawns


Sweet Chilli Garlic Dipping Sauce

  • 1/2 yellow capsicum, finely diced

  • 1/4 red onion, finely diced

  • 3 cloves Sunny Seafood frozen garlic, minced

  • 1/2 cup sweet chilli sauce

  • 1 tablespoon olive oil

  • Salt and pepper, to taste


Method


Crispy Rice Paper Prawns

  1. Thaw the prawns and pat dry with paper towel.

  2. Using scissors, cut the rice paper into strips approximately 4cm wide.

  3. Roll each strip into a cylinder, just wide enough to fit a prawn. Seal the edge with a little water and press firmly.

  4. Thread one prawn into each rice paper cylinder and set aside.

  5. Heat vegetable oil in a deep pot or saucepan over medium-high heat.

  6. Carefully add the wrapped prawns one by one into the hot oil.

  7. Fry until the rice paper is puffed and crispy.

  8. Remove and drain on paper towel.


Sweet Chilli Garlic Dipping Sauce

  1. Heat olive oil in a pan over medium heat.

  2. Add capsicum, red onion, and garlic, sautéing until softened.

  3. Stir in sweet chilli sauce and cook for 1–2 minutes until heated through.

  4. Season with salt and pepper to taste and transfer to a serving bowl.
