Ingredients
500g Sunny Seafood prawns
1 tablespoon Shaoxing wine
1 tablespoon sugar
½ teaspoon salt
½ teaspoon white pepper
Vegetable oil (for frying)
Method
Finely chop the prawns into a smooth mince.
Add the Shaoxing wine, sugar, salt and white pepper. Mix well until fully combined.
Transfer the mixture into a piping bag (or use your hands if preferred).
Cut the Chinese crueler into 3–4cm pieces.
Carefully stuff each piece of crueler with the prawn mixture and set aside.
Heat vegetable oil in a deep pan or fryer.
Fry the stuffed cruelers until golden brown and cooked through.
Remove and drain on paper towel.
