Warm Up Your Winter with a Cozy One-Pot Red Curry Dumplings

When the chilly air settles in and the days grow shorter, there’s nothing better than a comforting, hearty meal to chase away the cold. Enter one-pot red curry dumplings — a deliciously easy and satisfying dish that combines the rich flavors of fragrant red curry with tender dumplings, all cooked together in a single pot. Perfect for busy weeknights or lazy weekends, this winter warmer is sure to become a new favorite for warming your soul and delighting your taste buds.
INGREDIENTS
1 400 ml can of coconut milk
3 tablespoons Thai red curry paste
3 Sunny Seafood frozen garlic cloves (minced)
3 tablespoons soy sauce
2 teaspoons fish sauce
2 teaspoons sesame oil
3 large handfuls of Choy Sum
One packet of Sunny Seafood Gluten Free Chicken and Prawn Dumplings
One large handful of Sunny Seafood Edamame beans
Spring onions for garnish
Sesame seeds for garnish
Fresh Coriander to garnish
2 Sunny Seafood Frozen Red Chillies (Chopped) to garnish
Chilli Oil to garnish
METHOD
Preheat oven to 200 degrees Celsius
Combine: coconut milk, curry paste, garlic, soy sauce, fish sauce, and sesame oil. Mix until combined
Add: The Choy sum and Edamame to the base of a baking dish
Add: Arrange the frozen dumplings on top of the Choy Sum
Drizzle: The Coconut red curry sauce over the top and mix to coat
Bake covered: Cover the dish tightly with a lid or foil and bake for 20-30 minutes (until the dumplings are cooked through)
Garnish and serve: Remove from the oven. Finish with chili oil, coriander, spring onion, sesame seeds and edamame before serving.
