In this first installment of our two-part series, we’ll dive into the essential step of crafting an authentic Tom Yum paste—the heart and soul of this Thai classic. By perfecting this flavorful base, you’ll be able to effortlessly transform your winter meals into a vibrant, aromatic feast.

Simply store them in your freezer, ready to use whenever the craving strikes—making it quick and easy to whip up a warm, satisfying bowl of Tom Yum soup in minutes. Whether you're after convenient meals or a taste of Thailand, this recipe has you covered!



Ingredients:

• 21g of Sunny Seafood fresh frozen Red Thai Chilli (thawed)

• 3 Sunny Seafood fresh frozen Peeled Garlic Cloves (thawed)

• 3 Medium Sunny Seafood fresh frozen Red Shallots (thawed)

• 6 Sunny Seafood fresh frozen Lime Leaves (thawed), remove stem)

• 2 Sunny Seafood fresh frozen Lemongrass (thawed, inner white cores only)

• 1 inch Sunny Seafood fresh frozen Galangal (thawed)

• 3 tbsp Sunny Seafood Dried Shrimp

• 1 Tbsp Tamarind Paste

• 1 Tbsp Coconut Palm Sugar

• 3 Coriander roots

• 1/2 cup Oil


Cooking Instructions:

1. Chop all fresh thawed ingredients finely

2. Place all ingredients into a blender and blend to a smooth paste

3. Heat a pan with oil

4. Add the paste to heated pan and stir fry until fragrant to activate flavours (about 1 minute)

5. Place paste into an airtight jar and store in the refrigerator until use
