Mushroom and Tofu Stir Fry


We’re celebrating World Mushroom Day with a dish that’s as quick to cook as it is delicious to eat! Our Mushroom & Tofu Stir-Fry is a fast, healthy meal that’s absolutely packed with flavour — think tender tofu, juicy mushrooms, and a rich, savoury sauce that ties it all together. It’s fresh, fuss-free, and full of that umami goodness we foodies can’t resist. Perfect for busy weeknights or when you want something nourishing that tastes like a treat.

Ingredients



Method

 

  1. Thaw tofu, mushrooms, garlic and ginger before cooking.

  2. Heat cooking oil in a wok over high heat.

  3. Add Garlic, Ginger, Lemongrass/Chilli and stir well.

  4. Add sliced spring onions and stir, allow to cook until onions have softened.

  5. Slice tofu pieces in half.

  6. Add musrooms and tofu and stir well to incorporate.

  7. Add Oyster Sauce, Light Soy Sauce, Honey and Sesame Oil and continue stirring until Tofu and Mushrooms are heated through (this should only take a few minutes).

  8. Garnish with finely sliced spring onions and chilli to taste.

  9. Serve with steamed rice or noodles of your choice.
