Crispy Fried Mackerel with Garlic & Ginger Marinade

    Method:

  • Using a mortar and pestle, mash the fresh ginger and garlic into a smooth paste.

  • In a bowl, combine the ginger-garlic paste, red chili powder, turmeric powder, lime juice, and salt. Mix well to create a marinade.

  • Make three diagonal slits along both sides of each mackerel.

  • Using the back of a spoon or your hands, evenly coat the fish with the marinade, ensuring it seeps into the slits. Let it rest for 10 minutes.

  • Heat coconut oil in a pan over medium heat. Carefully place the marinated mackerel into the hot oil and fry for approximately 4 minutes on each side, or until crispy and golden brown. Flip gently to prevent breaking the flesh and skin.

  • Serve hot, garnished with a squeeze of fresh lime juice and lime wedges.
