Crispy Fried Mackerel with Garlic & Ginger Marinade
Ingredients:
2 Sunny Seafood Frozen Mackerels (thawed)
1 tbsp Sunny Seafood Frozen Peeled Garlic (thawed)
1 tbsp Sunny Seafood Frozen Ginger (thawed)
1 ½ tsp Red Chili Powder (or to taste)
1 tsp Turmeric Powder
1 tbsp Fresh Lime Juice
Salt to taste
2 tbsp Coconut Oil (for frying)
Lime Wedges (for garnishing)
Method:
Using a mortar and pestle, mash the fresh ginger and garlic into a smooth paste.
In a bowl, combine the ginger-garlic paste, red chili powder, turmeric powder, lime juice, and salt. Mix well to create a marinade.
Make three diagonal slits along both sides of each mackerel.
Using the back of a spoon or your hands, evenly coat the fish with the marinade, ensuring it seeps into the slits. Let it rest for 10 minutes.
Heat coconut oil in a pan over medium heat. Carefully place the marinated mackerel into the hot oil and fry for approximately 4 minutes on each side, or until crispy and golden brown. Flip gently to prevent breaking the flesh and skin.
