Bold, Buttery & Addictively Good: XO Pippies Pasta

Ingredients

  • 4 tablespoon of oil

  • 1 kg Sunny Seafood Frozen Raw Whole White Clam

  • 500g spaghetti

  • 250ml chicken stock (can use 250ml warm water and 1 tbsp chicken powder)

  • 2 tbsp XO sauce (See recipe HERE)

  • 100g butter, diced and chilled



For slurry 

  • 1 tsp corn flour mixed with 30ml water


  • Spring onions, garnish


Instructions

  1. Boil a pot of water and cook the spaghetti as per instructions to the packet.

  2. Heat the oil and add the XO and cook through for a couple of minutes until fragrant

  3. Add the pipi's and toss (pipi's should begin to open)

  4. Add the chicken stock and cook till they fully open.

  5. Add the slurry and mix until thickens.

  6. Add cooked (and strained) spaghetti to the pipi's mix

  7. Turn off the heat and add the butter and toss.

  8. Add to a plate and garnish with spring onions
